What I Had for Lunch Today: Eggplant Parmigiana



Company today, plus chilly weather, which warranted lighting the oven for an apple coffee cake and a casserole of eggplant parmigiana. I have recently acquired a lovely espresso machine with which I can make a righteously frothy breakfast cappuccino. Accompanied by the cake, it makes a nice breakfast. For lunch, the eggplant--I've already blogged the recipe for that--plus broccoli (steamed and then briefly tossed in a hot pan with butter, olive oil, and garlic), and a simple salad of romaine. Then for dessert, more cake, fruit, an espresso, and a limoncello. Share with an old friend you haven't seen for forty years.
