The Perfect Onion Ring
The other day I was in Hopkinton again, and stopped to eat at O'Toole's North Pond House. Convivial and cheap, but nothing much on the menu for vegetarians. It was chilly out and I was overdue for a dose of caffeine, so I decided that coffee and onion rings would fill the bill. And what a good choice! The coffee was good, and the onion rings were the onion rings of my dreams.
My mother used to make onion rings by dipping raw onion into milk and then flour, and deep frying. That was it. No cornmeal. I didn't run back into the kitchen to see how these were made, but they tasted just like Mom's. You never know when you're going to hit it lucky.
