What I Had for Lunch Today: Salade Niçoise


Salade niçoise is a French classic: a composed salad of greens topped with hard-boiled egg, tomato, cooked green beans and potatoes marinated in vinaigrette, black olives, and capers. It's supposed to have tuna and anchovies, too, but since I'm a vegetarian, I left that out.
