What I Had for Lunch Today: Celery Soup and Sandwich

Today was chilly, and for some reason I suddenly craved cream of celery soup. I sautéed an onion and a few stalks of celery, chopped, in a scant half cup of butter until soft, then dumped in a scant half cup of flour and stirred it together well. I added a few cups of water, stirred it smooth, and simmered it until the vegetables were very soft. I puréed the whole business in a blender and finished it with some cream. As a garnish, chopped celery leaves and a drizzle of organic pumpkin oil.

With the soup, I ate two little sandwiches made from the sperlonga loaf I had purchased from Whole Foods. I layered mayonnaise, a couple of sliced, sautéed "chicken" nuggets, tomato, parsley and chive from the garden. For a beverage, my usual cup of tea--Tazo chai with sugar and lemon.
