Tuesday and Wednesday are my busiest days: two seminars to teach in the evening, and a deadline for my newspaper column at 12:00 noon the next day. Before I started teaching at Kaplan, I had the column under control; now it seems I'm always rushing the morning of my deadline to check facts, come up with a hook, or whatever. So Wednesday lunch is no gourmet affair.
Today I was still typing at noon, so I ran downstairs and threw some Mexican cheese on a whole wheat tortilla, added some sweet and hot green peppers, and nuked the whole business till the cheese was bubbling. My heavy-duty professional pizza wheel makes cutting this into bite-sized strips a snap. And that was it. I'll be raiding the pantry in an hour.
